When Dr. Wayne Lynch was a boy, he worked on his uncle's dairy farm in the summers. When it rained, he had to clean the barn, which meant shoveling lots of cow patties. He wondered why cows produced so much excrement, and why they always seemed to poop the minute they got into the barn to be milked.
