I would normally say that walking into a barbecue restaurant in Memphis and ordering a salad is a major faux pas, but I am in love with the versatile chef’s salad at Central BBQ.
Filling a pretty red sundried-tomato-and-basil tortilla salad bowl are the standard-issue salad ingredients: lettuce, shredded colby jack cheese, tomatoes, and pepperoncini peppers. But then you have your choice of pork, chicken, turkey, beef, or portabella mushroom generously piled on top. There’s also quite a variety of dressings available, including Thousand Island, ranch, bleu cheese, Italian, oil and vinegar, and Central BBQ’s own house dressing, which is a blend of Caesar and hot spice sauce. As tasty as the house dressing is, I prefer to top mine with Central’s mild barbecue sauce and bleu cheese on the side. (I never said this salad was low fat!) Then the salad, with its crunchy bowl broken into bits for dipping, becomes the perfect fusion of barbecue nachos and barbecue salad...(See a picture here).
